This is a screenshot of how the different options appear on InDesign (although Photoshop and Illustrator are much the same):
Sometimes, however, printers require you to use their own settings - which they will send to you in a .joboptions file.
It is recommended to copy this file to your desktop and then within InDesign you can select Adobe PDF Presets and from there select Define:
From here you can select to load the new settings by clicking Load and then navigating to the .joboptions file on your desktop. Be sure to name this file so as you can quickly and easily identify it as being from the particular printer for whom you are preparing the file so as to make selection simple in the future.
Once uploaded this setting option becomes available in your drop down menu and the pdf files you export will be configured as per the printer's requirements.
